Give me a Huey and I can do anything except landing it upside down.
These are set paths though, wouldn't be too hard after practising it a few times.
The real skill in flying is the art of improvisation.
Flying over the city at 250km/h and suddenly having to pick a valid parking spot. Or having to drop a crate inside a balcony in the middle of a firefight and stuff. Keeping your chopper alive while doing the craziest nessecary manouvres under pressure in combat zones is what really counts.

Try doing that on a server with 32 angry Arabic soldiers trying to blast you out the sky, on a training server that's not even difficult.
